I've never bloged before but I want to vent so here ya have it.

I've worked in the culinary industry for the last 15 years. It's been an up and down experience along the way. I've had some ass kicking jobs and some real crap ones.

Passion is one descriptive for my profession. I love food. I love the creativity. I love the fact that at the end of the day you can stand next to your kitchen mates and be proud of the fact that you guys kicked ass.

Ours is a private profession. a person should never have to know what the kitchen just went through to present your meal to you. You are there to enjoy the food experience.

The passion and professionalism is being striped away by operators concerned with the bottom line. I understand the need of the bottom line, but DAMN the bottom line. If your concept is not top notch and you food is not full of love, then your joint will never realize its full potential. you may get lucky, stay open and turn a profit but you will never be one of the few that stand out from the rest.

I want get excited about going to work, getting fresh products, streaching the boundrys of my knowledge, putting out food that makes people want to go home a make love together like it was the first time. I don't want "just a paycheck".

If it's to be just a paycheck, then I will leave my profession and collect it doing something else.
